Here's a simple recipe for Pulao, a delicious Indian rice dish:
Ingredients:
- 1 cup Basmati rice
- 2 cups water
- 2 tablespoons vegetable oil or ghee (clarified butter)
- 1 onion, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 green chili, chopped (optional, depending on desired spiciness)
- 1 teaspoon cumin seeds
- 4-5 cloves
- 4-5 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon Garam Masala
- Salt to taste
- 1/2 cup mixed vegetables (peas, carrots, green beans, etc.)
- Fresh cilantro leaves for garnish (optional)
Instructions
Rinse the Basmati rice thoroughly and soak it in cold water. After about 30 minutes, drain the water. In a pot, bring 2 cups of water to a boil. Add the soaked rice and cook over low heat until the rice is almost done. Drain the rice and set it aside.
Heat the oil or ghee in a large pot. Add cumin seeds, cloves, green cardamom pods, and cinnamon sticks. Stir until the spices release their aroma. Add the chopped onion and sauté until translucent. Then, add the ginger-garlic paste and green chili. Stir and cook until the raw smell disappears.
Add the mixed vegetables and sauté briefly until they are tender. Add the partially cooked rice to the pot and gently mix to evenly distribute the spices and vegetables.
Season with Garam Masala and salt. Stir until everything is well combined.
Cover the pot and continue cooking the Pulao over low heat until the rice is fully cooked, and the flavors have melded.
Before serving, garnish the Pulao with fresh cilantro leaves if desired.
Pulao can be served on its own or with yogurt sauce, raita, or a simple vegetable curry. Enjoy your meal!
